Arugula, roasted peaches, topped with the burrata cheese makes this the ultimate summer salad! 

The grilled peaches are the main highly of the salad as they become juicer and give a caramelised, slightly smoked taste which intensifies their sweetness and makes this salad the perfect all-summer salad that can be a light dinner, a side dish or the perfect elegant dish to share at gatherings all summer long! 

If you don’t have an outdoor grill, no worries! Grilling peaches on a cast iron grill pan will definitely do the trick!

Method

⋅ use peaches that are not to ripe nor to hard—just ripe enough that when you squeeze them they’re a bit firm 

⋅cut peaches in half, remove pit and gently coat the cut side with olive oil or avocado oil (1 peach per person)

⋅place the cut side peach on a hot grill 3-4 minutes until grill marks appear & set aside (grilling them on both sides might make them mushy) 

⋅ scatter arugula on a serving plater, pine nuts & place grilled peaches

⋅nestle burrata cheese in the middle, drizzle olive oil and balsamic vinaigrette 

⋅sprinkle sea salt, ground pepper, a generous amount of basil leaves (also if you like add mint leaves) 

You can serve it with crusty bread on the side. Also adding a little prosciutto throughout the salad will give a delicious sweet, salty flavour.
