In southern Greece, wintertime is when we get to savour the fruit from the orange groves. They say that once the oranges become the truest orange colour, it’s officially winter! A common and very delicious combo of oranges and cake is the all-time greek recipe of protokalopita. Oranges being the main star of the recipe, I wanted to create something a little different. Keeping it simple and easy, I turned a traditional bundt cake recipe into a work of art!

Method

Cake

Whisk together 3 eggs, 1 cup sugar, 1 tbsp vanilla, zest of 1 orange, 1/4 cup oil (I used olive oil), 3 tbsp greek yoghurt or sour cream   Then add 2 cups flour, 3 tsp baking soda, juice of 1 orange

Whisk well together then pour into greased pan (I used two round ones. Bundt pans are good too.) Bake in preheated oven 180 oC for 25-40 minutes (depending on oven)

Frosting

350gr cream cheese                                                                      

2 cups confectioners’ sugar                                                        

1/2 tbsp vanilla                                                                            

a little orange zest to your liking

Once the cake is out of the oven, let it cool down

Cover cake with zesty frosting                                                    

Add ringlets of fresh orange & a dash of orange zest! (optional)
